Honey, lemon and garlic chicken

This is a seriously old BBC Good Food recipe. One I’ve been making for years so I thought I would share it. It’s not available online unlike most of the other GF stuff so …..

There really is only one step to it – melt the butter, lemon juice, freshly chopped rosemary, crushed garlic and honey in a pan with, as the recipe suggests, plenty of pepper and some sea salt.

That is sloshed over the chicken and then the potatoes and lemons are nestled along side. Job done. Into the oven at 170C for 50-60 mins.

Give it a little baste part way through and voilà.

The buttery, lemony sauce makes a great warm dressing for salad leaves. It’s sweet and tart, crispy with soft potatoes. Delicious contrast in every mouthful.

Do it again? Family favourite.
